In addition to the harvest date, the vinification and the wines will change, since under a different climate, the composition of the grapes changes. New aromatic balances will therefore have to be found by the oenologists to develop the wines of 2050. In order to help all these actors to prepare for the climate of tomorrow, the LACCAVE project, "Long-term adaptation to climate change for viticulture and oenology ”, gathered knowledge, disseminated knowledge and anticipated four scenarios for the wine regions of France.
